Turkish-Style Stuffed Eggplant with Ground Beef

37

This stuffed eggplant with ground beef is a Turkish-style favorite, filled with savory ground beef, onion, garlic, and tender eggplant, then topped with melted Gouda cheese. Serve it with creamy yogurt and crispy baked pita for a comforting Mediterranean-inspired dinner.

Instead of slicing the eggplants lengthwise, they are cut into thick rounds and hollowed out to create individual stuffed eggplant cups. They look impressive on the table but are surprisingly simple to prepare.

The cool yogurt balances the rich beef filling, while olive oil, paprika, parsley, and Kalamata olives turn it into a complete and colorful meal.

Is This Traditional Turkish Stuffed Eggplant?

This recipe is inspired by Turkish stuffed eggplant, particularly karniyarik, a classic dish made with eggplant and seasoned ground meat.

Traditional karniyarik is usually prepared with whole eggplants stuffed with ground beef, onions, tomatoes, peppers, garlic, and herbs. This recipe uses the same general combination of eggplant and savory beef but presents it differently.

The eggplants are cut into individual cups and finished with Gouda cheese. For that reason, I call it Turkish-style stuffed eggplant rather than traditional karniyarik. Ingredients You’ll Need

Eggplants

Choose four or five small to medium eggplants that feel firm and heavy for their size. Eggplants with similar diameters will produce evenly sized cups.

Ground beef

I recommend using 85–90% lean ground beef. It has enough fat to keep the filling flavorful without making it greasy.

Onion and garlic

Finely chopped onion and garlic create the savory base for the filling.

Gouda cheese

Gouda melts beautifully and adds a mild, creamy flavor. Mozzarella, Monterey Jack, or a combination of mozzarella and cheddar can also be used.

Plain yogurt

Use plain whole-milk Greek yogurt or regular unsweetened yogurt. Greek yogurt will produce a thicker sauce.

Pita bread

The pita is cut into wedges and baked until crisp for dipping into the yogurt and catching any extra filling.

How to Make Stuffed Eggplant with Ground Beef

Preheat the oven to 350°F.

Trim the ends from the eggplants and cut each one crosswise into two or three thick pieces, depending on its length.

Use a small paring knife and spoon to remove the center of each piece, leaving approximately ½ inch of flesh around the sides and bottom. Do not cut all the way through.

Finely chop the removed eggplant flesh and reserve it for the filling.

Heat olive oil in a large skillet. Add the onion and cook until softened. Add the garlic and chopped eggplant and continue cooking until the eggplant begins to soften.

Add the ground beef, salt, black pepper, paprika, and cumin. Cook until the beef is browned, breaking it into small pieces with a spoon.

Arrange the hollowed eggplant cups upright in a baking dish and fill them generously with the beef mixture.

Pour approximately ½ cup of lightly salted water into the bottom of the baking dish. This creates steam and helps the eggplants become tender without drying out.

Cover loosely with foil and bake for 15–20 minutes. Remove the foil, sprinkle each eggplant with shredded Gouda, and bake uncovered for another 8–10 minutes, until the cheese is melted and the eggplants are tender.

How to Make Crispy Pita Wedges

Cut each pita into eight wedges and arrange them on a baking sheet.

Brush or spray them lightly with olive oil. Bake at 350°F for approximately 6–8 minutes, turning once, until crisp and lightly golden.

Watch them closely toward the end because pita can brown quickly.

Yogurt for Serving

Plain yogurt with olive oil, paprika, parsley, and Kalamata olive served with pita

Spread the plain yogurt over a shallow serving plate. Drizzle it with extra-virgin olive oil and sprinkle it with paprika or Aleppo pepper.

Finish with chopped parsley and a Kalamata olive in the center.

Serve the warm stuffed eggplants with the cool yogurt and crispy pita wedges.

Recipe Tips

Don’t discard the eggplant flesh

Chop it and cook it with the meat. It adds moisture and flavor to the filling and prevents food waste.

Leave a sturdy border

Keep approximately ½ inch of eggplant flesh around the sides and bottom. If the walls are too thin, the cups may collapse while baking.

Choose smaller eggplants

Large American globe eggplants can have wide, seedy centers. Small to medium eggplants are easier to portion and usually have more tender flesh.

Cover during the first part of baking

The steam trapped under the foil helps the raw eggplant cups soften. Remove the foil before adding the cheese.

Check for tenderness

A paring knife should slide easily into the side of an eggplant cup. If the eggplant still feels firm, bake for another 5–10 minutes.

Substitutions and Variations

  • Replace the ground beef with ground lamb or turkey.
  • Use mozzarella, Monterey Jack, provolone, or cheddar instead of Gouda.
  • Add diced tomatoes or one tablespoon of tomato paste to the meat filling.
  • Add red pepper flakes or Aleppo pepper for heat.
  • Replace parsley with fresh mint or dill.
  • Use sour cream instead of yogurt if necessary.
  • Serve with rice, bulgur, couscous, or a fresh tomato-cucumber salad instead of pita.

Make Ahead Instructions

Prepare the beef filling and hollow the eggplants up to one day ahead. Store them separately in covered containers in the refrigerator.

When ready to cook, fill the eggplants, add water to the baking dish, and bake as directed. You may need to add approximately 5 minutes because the ingredients will be cold.

Storage and Reheating

Store leftover stuffed eggplants in an airtight container in the refrigerator for up to 3 days.

Reheat them in a covered baking dish at 350°F for approximately 15 minutes, or until heated through. Remove the cover during the last few minutes to refresh the cheese topping.

Keep the yogurt and pita separate from the eggplants.

Frequently Asked Questions

Baked eggplant cups filled with seasoned ground beef and topped with melted Gouda

Do I need to peel the eggplants?

No. The skin helps the eggplant cups hold their shape. It will soften during baking.

Do I need to salt the eggplants first?

Usually not. Most modern eggplants are not very bitter. If your eggplants are large or noticeably seedy, sprinkle the cut pieces with salt, let them rest for 20 minutes, and pat them dry before filling.

Can I use ground lamb?

Yes. Ground lamb works especially well with the Turkish-inspired flavors. You can also combine equal parts beef and lamb.

Can I make this without cheese?

Yes. The cheese is part of this particular variation, but the eggplants will still be delicious without it.

What should I serve with stuffed eggplant?

Serve it with seasoned yogurt, crispy pita, rice, bulgur, couscous, or a fresh Mediterranean salad.
