This apple Charlotte cake is a light, airy dessert made with a simple sponge-style batter and plenty of fresh apples. This version is layered with cinnamon and sliced almonds, then finished with a crisp cinnamon-sugar topping. For one 9-inch (23 cm) round pan or a 9 × 9-inch (22 × 22 cm) square pan:

  • 4 large eggs, at room temperature
  • 3/4 cup plus 1 tablespoon (160 g) granulated sugar
  • 1 teaspoon vanilla sugar or 1 teaspoon vanilla extract
  • Pinch of salt
  • 1 1/3 cups (160 g) all-purpose flour

The Best Apples for Apple Charlotte

Choose firm, fragrant apples with a sweet-tart flavor. Granny Smith, Braeburn, Pink Lady, Jonagold, and Honeycrisp are all good choices. Very soft apples can break down too much and release excess juice, while very sweet apples may make the cake taste overly sugary.

Slice the apples thinly and as evenly as possible. Thin slices will soften during the relatively short baking time and cook at the same rate as the batter.

Place the eggs, 160 g sugar, vanilla sugar (or vanilla extract), and salt in a large mixing bowl. Beat with an electric mixer for 7–8 minutes, until the mixture is very pale, thick, and noticeably increased in volume.

Sift the flour with the baking powder. Add it to the egg mixture in a few additions, gently folding with a spatula from the bottom upward. Mix only until no dry streaks remain. Avoid stirring too long, or the batter may lose its volume.

In a small bowl, mix the remaining 1/2 teaspoon cinnamon with 1 1/2 teaspoons sugar. Sprinkle the cinnamon sugar evenly over the top, then finish with the remaining sliced almonds.

4. Bake

Bake at 350°F (180°C) for about 30 minutes, or until the top is golden and a wooden skewer inserted into an area of cake batter comes out dry.

Keep in mind that a skewer inserted directly into the apple layer may look slightly moist because of the fruit juices.

Let the cake rest in the pan for 10–15 minutes. Carefully transfer it to a board or wire rack and allow it to cool slightly before slicing.
