Ingredients

  • 1 3/4 lb turkey liver 800 g; chicken or rabbit liver also works
  • 1 large onion
  • 2 medium apples a sweet variety such as Gala or Fuji
  • 2–3 tablespoons olive oil
  • scant 1/2 cup dry white wine 100 ml
  • 1 teaspoon dried garlic or garlic powder
  • salt to taste
  • black pepper to taste, optional
  • 10 1/2 tablespoons unsalted butter 150 g, about 1 1/3 sticks

Method

  1. Trim the liver, cutting away any connective tissue, fat, and greenish spots (bile makes the pâté bitter). Pat dry with paper towels.
  2. Peel and roughly chop the onion. Heat the olive oil in a large skillet over medium heat and cook the onion for 8–10 minutes, until soft and golden.
  3. Peel and core the apples, then cut them into wedges. Add them to the skillet and cook for 3–5 minutes, stirring occasionally, until they begin to soften.
  4. Add the liver, season with salt, and sprinkle in the dried garlic. Cook for 3–4 minutes, stirring occasionally, until the liver changes color on all sides.
  5. Pour in the white wine, cover the skillet, and simmer over low heat for 5–8 minutes, just until the liver is cooked through with no pink in the center (165°F / 74°C). Don't overcook it, or the pâté will turn grainy.
  6. Remove from the heat and let the mixture cool for 10–15 minutes. Blend with an immersion blender or in a food processor until completely smooth. Taste and adjust the salt, and add black pepper if you like.
  7. Meanwhile, clarify the butter: melt it over low heat and skim off the white foam from the surface. Carefully pour the clear golden butter into a cup, leaving the milky solids at the bottom of the pan.
  8. Spoon the pâté into small jars or ramekins and smooth the tops. Pour a thin layer of clarified butter over each one, making sure the entire surface is covered.
  9. Refrigerate for at least 4 hours, or overnight, until the pâté is fully chilled and the butter has set.

Notes

  • Turkey liver is mild and creamy. Chicken or rabbit liver can be used in the same amount; smaller chicken livers may cook a minute or two faster.
  • No wine? Use the same amount of chicken broth plus 1 teaspoon apple cider vinegar.
  • Cook the liver only until it reaches 165°F (74°C). Overcooked liver makes a grainy, dry pâté.
  • For an extra-silky texture, press the blended pâté through a fine-mesh sieve.
  • Storage: sealed with clarified butter, the pâté keeps in the refrigerator for up to 5 days. Once the seal is broken, eat it within 2–3 days. Freeze for up to 2 months and thaw overnight in the refrigerator.
