Method
- Preheat and season. Preheat the oven to 425°F (220°C). Pat the chicken dry and cut into 1–1½-inch pieces. Toss with the salt, pepper, and garlic powder, if using.

- Coat the chicken. Add the cornstarch and toss to coat evenly. Add the olive oil and toss again.

- Bake. Arrange the chicken in a single layer on a parchment-lined baking sheet, leaving space between the pieces. Bake for 20–25 minutes, turning halfway through, until cooked through and the center reaches 165°F (74°C).

- Make the sauce. Combine the soy sauce, honey, sriracha, sweet chili sauce, lime juice, and minced garlic in a large skillet. Simmer gently for 2–4 minutes, stirring, until slightly thickened. Remove from the heat and stir in the sesame oil.

- Toss and serve. Add the hot, cooked chicken to the skillet and toss to coat. Serve immediately with chopped green onions, sliced fresh chili, and rice, if desired.

Notes
• Reduce the sriracha for a milder sauce.
• Soy sauce adds saltiness. Reduce the salt on the chicken if preferred, and start with 5 tablespoons of soy sauce.
• Use Thai-style sweet chili sauce, not tomato-based chili sauce.
• If the sauce thickens too much, add water, starting with 1 tablespoon.
• The chicken coating softens after tossing with the sauce. Serve immediately.
• Nutrition is an estimate for one-fourth of the recipe made with chicken breast, without rice or other sides.
