Ingredients

  • 14 oz dry pasta (400 g), such as fusilli, penne, or rigatoni
  • 2 tablespoons butter (30 g)
  • 1 large yellow onion finely diced
  • 2 garlic cloves minced
  • 7 oz cherry tomatoes (200 g), halved or quartered, or 2 large ripe tomatoes, chopped
  • 14–18 oz tomato pasta sauce (400–500 g), such as marinara
  • scant ½ cup light cream (100 ml)
  • 2 oz freshly grated Parmesan (about 60 g), optional, plus more for serving
  • 1 teaspoon dried Italian seasoning or to taste
  • salt and freshly ground black pepper to taste
  • chopped fresh parsley or basil optional, for serving
  • reserved pasta cooking water as needed

Method

  1. Bring a large pot of salted water to a boil. Cook the pasta according to the package directions until al dente. Reserve about 1 cup of pasta cooking water, then drain.
  2. Meanwhile, melt the butter in a large, deep skillet over medium heat. Add the onion and cook for 5–7 minutes until softened and lightly golden. Add the garlic and cook for about 30 seconds.
  3. Stir in the Italian seasoning and fresh tomatoes. Cook for 3–5 minutes until the tomatoes soften and release their juices.
  4. Add the tomato pasta sauce and cream. Bring to a gentle simmer and cook over low heat for 3–5 minutes. Season with salt and black pepper to taste.
  5. Add the drained pasta and toss to coat. Add reserved pasta water a little at a time if needed. Remove from the heat and stir in the Parmesan, if using.
  6. Serve immediately with extra Parmesan and fresh parsley or basil.

Notes

  • Light cream works well; heavy cream can be used for a richer sauce.
  • Use a prepared tomato pasta sauce, such as marinara. Plain passata may need extra seasoning and a few more minutes of simmering.
  • Add reserved pasta water gradually to loosen the sauce.
  • Stir in Parmesan off the heat.
  • Store leftovers in an airtight container in the refrigerator and use within 2 days. Reheat gently with a splash of water or cream.
