Creamy Chicken Pasta with Tomatoes

Ingredients
  

  • 10½ ounces 300 g pasta
  • 1.1 pounds 500 g boneless, skinless chicken breast
  • 5 ounces 150 g fresh tomatoes, diced
  • 1 medium onion finely chopped
  • ¾ cup light cream or half-and-half plus 1 tablespoon (200 ml)
  • Fresh herbs such as parsley or basil, to taste
  • Salt to taste
  • Chicken seasoning to taste
  • 2 tbsp Olive oil for marinating and cooking
  • 3 tablespoons 40 g unsalted butter
  • Grated Parmesan for serving (optional)

Method
 

  1. Prepare the chicken: Slice the chicken breast into thin pieces so it cooks quickly and evenly. Season with salt and chicken seasoning, drizzle with olive oil, and toss to coat.

  2. Cook the pasta: Bring a large pot of salted water to a boil. Cook the pasta according to the package directions until al dente. Drain and set aside.

  3. Cook the chicken: Heat a large skillet over medium-high heat. Add the chicken and cook until golden brown and completely cooked through. Transfer the chicken to a plate and set aside.

  4. In the same skillet, melt the butter. Add the chopped onion and cook until soft and translucent.

  5. Add the diced tomatoes and cook for a few minutes, until they begin to soften and release their juices.
  6. Pour in the cream and stir well. Bring the sauce to a gentle simmer, then add the cooked pasta and toss until evenly coated.

  7. Serve: Slice the cooked chicken and arrange it over the creamy pasta. You can leave the chicken on top or mix it into the sauce. Garnish with fresh herbs and grated Parmesan, if desired, and serve immediately.

Notes

  • Slice the chicken into pieces of similar thickness so they cook evenly.
  • Cook the chicken until its internal temperature reaches 165°F (74°C).
  • For a thicker sauce, let it simmer gently for a few minutes before adding the pasta.
  • If the sauce becomes too thick, add a small amount of reserved pasta water.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently with a splash of cream or milk.
