Ingredients
  

  • 2 thick slices sourdough bread
  • 1 large ripe avocado
  • ½ cup cherry tomatoes halved
  • ¼ cup crumbled feta cheese
  • 2 tablespoons microgreens optional, but recommended
  • 1 tablespoon extra virgin olive oil
  • Flaky sea salt to taste
  • Freshly ground black pepper to taste
  • 1 teaspoon fresh lemon juice optional

Method
 

Step 1: Toast the Bread
  1. Toast the sourdough bread until golden brown and crisp. You can use a toaster, grill pan, or oven. The bread should be crunchy on the outside while remaining slightly soft inside.

Step 2: Prepare the Avocado
  1. Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Add the lemon juice (if using), a pinch of flaky sea salt, and freshly ground black pepper. Mash gently with a fork until creamy, leaving a few small chunks for texture.
Step 3: Assemble the Toast
  1. Spread the mashed avocado evenly over each slice of toasted sourdough. Arrange the halved cherry tomatoes on top, then sprinkle generously with crumbled feta cheese and fresh microgreens.
Step 4: Finish and Serve
  1. Drizzle with extra virgin olive oil and season with a little more flaky sea salt and black pepper if desired. Serve immediately while the toast is still warm and crispy.

Notes

  • Choose ripe avocados that give slightly when gently pressed.
  • Sourdough bread works best because its sturdy texture holds the toppings without becoming soggy.
  • For extra flavor, lightly rub the toasted bread with a clove of garlic before adding the avocado.
