Step 1: Toast the Bread
- Toast the sourdough bread until golden brown and crisp. You can use a toaster, grill pan, or oven. The bread should be crunchy on the outside while remaining slightly soft inside.

Step 2: Prepare the Avocado
- Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Add the lemon juice (if using), a pinch of flaky sea salt, and freshly ground black pepper. Mash gently with a fork until creamy, leaving a few small chunks for texture.
Step 3: Assemble the Toast
- Spread the mashed avocado evenly over each slice of toasted sourdough. Arrange the halved cherry tomatoes on top, then sprinkle generously with crumbled feta cheese and fresh microgreens.
Step 4: Finish and Serve
- Drizzle with extra virgin olive oil and season with a little more flaky sea salt and black pepper if desired. Serve immediately while the toast is still warm and crispy.
